Salmon Bites

  • 2 salmon fillets, skin removed, cut into 1-inch (2.5-cm) cubes
  • 1 tbsp (15 ml) soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper

Spicy Mayo

  • 2 tbsp (30 ml) mayonnaise
  • 1 tsp sriracha
  • ½ tsp soy sauce
  • ½ tsp lime juice

For Serving

  • 2 cups (216 g) cooked jasmine rice
  • ½ cup (85 g) shelled edamame
  • ½ cucumber, thinly sliced
  • ½ avocado, sliced
  • 1 tsp sesame seeds
  • 1 green onion, sliced


Instructions

  • Cut the salmon into approximately 1-inch (2.5-cm) cubes.
  • Add the salmon to a bowl with soy sauce, sesame oil, honey, garlic powder, smoked paprika, and black pepper.
  • Toss gently until the salmon is evenly coated and let it sit for about 5 minutes.
  • Preheat the air fryer to 400°F (205°C).
  • Place the salmon cubes in a single layer in the air fryer basket.
  • Air fry for 6 to 8 minutes, shaking the basket halfway through.
  • While the salmon cooks, mix the mayonnaise, sriracha, soy sauce, and lime juice in a small bowl.
  • Divide the cooked jasmine rice between 2 to 3 serving bowls.
  • Add the edamame, cucumber, and avocado.
  • Top with the warm air fryer salmon bites.
  • Drizzle with spicy mayo.
  • Sprinkle with sesame seeds and sliced green onion.
  • Serve immediately.
