Jerky is a portable, chewy snack you can easily make in your air fryer. This version has a savory teriyaki flavor and a bit of heat, but feel free to reduce the pepper flakes.
PREP: 40 MIN. + MARINATING
COOK: 1 ¾ HOURS
MAKES: 8 SERVINGS
- 1 beef flank steak (1 ½ to 2 lbs.)
- ⅔ cup reduced-sodium soy sauce
- ⅔ cup Worcestershire sauce
- ¼ cup honey
- 3 tsp. coarsely ground pepper
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 1 ½ tsp. crushed red pepper flakes
- 1 tsp. liquid smoke
1. Trim all visible fat from steak. Freeze, covered, 30 minutes or until firm. Slice steak along the grain into long ⅛-in.-thick strips.
2. Transfer to a shallow dish. In a small bowl, whisk remaining ingredients; add to the beef. Turn to coat. Refrigerate, covered, 2 hours or overnight, turning occasionally.
3. Preheat air fryer to 350°. Drain beef, discarding marinade. In batches, arrange beef strips in single layer on greased tray in air-fryer basket. Cook until meat reaches 165°. Reduce heat to 175°. Cook until desired texture is achieved, 1 ½-2 hours.
4. Remove from air fryer; cool completely on wire racks. Using paper towels, blot any beads of oil on jerky. For best quality and longer storage, store jerky, covered, in refrigerator or freezer.
