You’ll be amazed how the air fryer brings out the sweetness of the cabbage and onions. The vinegar-mustard sauce makes this dish similar to a warm slaw.

- 1 medium head cabbage (about 2 lbs.), coarsely chopped
- 2 large onions, chopped
- ¼ cup olive oil
- ¾ tsp. salt
- ¾ tsp. pepper
- 3 Tbsp. minced fresh chives
- 3 Tbsp. minced fresh tarragon
DRESSING
- 2 Tbsp. white balsamic vinegar or white wine vinegar
- 2 Tbsp. olive oil
- 2 Tbsp. Dijon mustard
- 1 Tbsp. lemon juice
- ½ tsp. salt
- ½ tsp. pepper
1. Preheat air fryer to 400°. Place cabbage and onions in a large bowl. Drizzle with oil; sprinkle with salt and pepper and toss to coat. In batches, place cabbage on greased tray in air-fryer basket. Cook until vegetables are tender and lightly browned, 12-15 minutes, stirring halfway through.
2. Transfer cabbage mixture to a large bowl. Add chives and tarragon; toss to combine. In a small bowl, whisk the dressing ingredients until blended. Drizzle over cabbage mixture; toss to coat. Let stand 10 minutes to allow flavors to blend. Serve warm or at room temperature.
