Air Fryer Cheeseburger-Stuffed Zucchini Boats Recipe by Aileen Clark

The zucchini in this recipe is basically just a vessel for delicious cheeseburger goodness. The cheeseburger stuffing is made with a combination of well-seasoned ground beef, cream cheese, and gooey melted Cheddar cheese.

Serves 4

  • 1 pound (93% lean) ground beef
  • ½ cup beef broth
  • ¼ cup cream cheese
  • 2 tablespoons ketchup
  • 1 teaspoon yellow mustard
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 large zucchini
  • 1 cup shredded sharp Cheddar cheese

1. In a large skillet over medium-high heat, cook ground beef, stirring occasionally, until browned, about 7 minutes. Drain the fat and mix in beef broth, cream cheese, ketchup, mustard, onion powder, garlic powder, salt, and pepper. Continue mixing until fully combined. Bring to a boil and reduce heat to low. Let simmer 5 minutes or until sauce is thickened and cream cheese is melted.

2. Preheat air fryer to 350°F.

3. Slice zucchini lengthwise and scoop out center. Spoon meat mixture into center of each zucchini and carefully place stuffed zucchini inside air fryer, with stuffing facing up. Sprinkle cheese over each zucchini boat.

4. Air fry 10 minutes or until zucchini is fork-tender and cheese is melted.

5. Remove from air fryer and serve.
