Air Fryer Chicken Caprese Recipe by Aileen Clark

This chicken dish is inspired by the traditional salad. The chicken is complemented by the juiciness of the tomatoes and saltiness and creaminess of the mozzarella.

Serves 4

  • 4 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (1 pound total)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon dried oregano
  • 6 ounces mozzarella cheese, sliced ¼" thick
  • 3 large tomatoes, sliced ½" thick
  • ¼ cup chopped fresh basil

1. Preheat air fryer to 380°F.

2. Brush olive oil on both sides of chicken and sprinkle with salt, pepper, and oregano.

3. Place chicken inside air fryer in a single layer and air fry 10 minutes. Flip chicken over and top with mozzarella cheese. Air fry an additional 8 minutes. Chicken is done when it reaches an internal temperature of 165°F.

4. Remove chicken from air fryer. Arrange tomato and basil over chicken and serve.


The salad that inspired this dish is made with a combination of sliced tomatoes, sliced mozzarella, and fresh basil leaves. It’s then seasoned with salt and pepper and drizzled with olive oil.
