½ cup salted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
⅓ cup unsweetened cocoa powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup mint chips
1 Preheat air fryer to 350°F.
2 In a large bowl, use an electric hand mixer to beat butter and sugar until fluffy, about 2 minutes. Add egg and vanilla, then mix to combine.
3 In a separate large bowl, whisk together flour, cocoa powder, baking soda, and salt.
4 Pour the wet ingredients into the dry ingredients and stir to combine. Fold in mint chips until well combined.
5 Scoop about 2 tablespoons dough, roll into a ball, then gently flatten into a disc about ½" thick disc. Repeat with remaining dough.
6 Place cookies into air fryer basket, working in batches as needed. Bake 10 minutes or until edges are set. Transfer to a wire rack to cool. Serve warm.
