This is a weekend treat. I’d guess – at one time or another – we’ve all paid a visit to the golden arches for a takeout breakfast. Now you can make breakfast muffins at home, with the aid of your trusty air fryer. I’ve added some extra flavourings to my sausage patties, but if you find a sausage flavour combination that you like, then you can use that without the additional ingredients. Why not throw a few hash browns into the air fryer to serve with these?
SERVES 4
- 4 good-quality sausages, total weight about 300 g (10½ oz)
- 1 teaspoon dried thyme (optional)
- 1 teaspoon garlic granules (optional)
- 4 processed cheese slices
- 4 muffins, halved and toasted
- 4 eggs, fried to your liking ketchup or brown sauce (optional)

1. Skin the sausages and put the meat into a bowl, then add the thyme and garlic granules, if using. Mix well, then shape into 4 patties, each slightly bigger than the muffins. Chill until needed.
2. Preheat the air fryer to 200°C/400°F.
3. Place the patties on the crisp plate inside the air fryer drawer, then cook for 10 minutes, turning halfway through.
4. Place a slice of cheese on the bottom half of a toasted muffin, pop on the sausage patty, then top with a fried egg. Add a little ketchup or brown sauce, if you like, sprinkle with black pepper then top with the other half of the muffin. Repeat to make 4 muffins.
