- 2 russet potatoes, peeled and cut into 1" cubes
- 1 pound boneless, skinless chicken thighs, cut into 1" cubes
- 4 large carrots, peeled and cut into 1" pieces
- 3 tablespoons olive oil
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon salt
- ½ teaspoon garlic powder
1. Preheat air fryer to 380°F.
2. In a large bowl, combine all ingredients and toss to coat.
3. Arrange chicken mixture inside air fryer in an even layer. Air fry 18 minutes, stirring every 6 minutes. Chicken is done when it reaches an internal temperature of 165°F.
4. Remove from air fryer and serve.
