Air Fryer Chicken and Potatoes Recipe by Aileen Clark

This recipe features a starch, a veggie, and meat in one dish! It’s a combination of tender chicken, comforting potatoes, and sweet carrots. This recipe can be prepped ahead of time and refrigerated until you are ready to cook it, making it an easy weeknight meal.

Serves 4

  • 2 russet potatoes, peeled and cut into 1" cubes
  • 1 pound boneless, skinless chicken thighs, cut into 1" cubes
  • 4 large carrots, peeled and cut into 1" pieces
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • ½ teaspoon garlic powder

1. Preheat air fryer to 380°F.

2. In a large bowl, combine all ingredients and toss to coat.

3. Arrange chicken mixture inside air fryer in an even layer. Air fry 18 minutes, stirring every 6 minutes. Chicken is done when it reaches an internal temperature of 165°F.

4. Remove from air fryer and serve.

CHOOSING A POTATO

When shopping for potatoes, look for ones that are firm and smooth without any cuts or blemishes. They should not have any sprouts growing out of them.
