Air Fryer Chicken Kebabs Recipe by Aileen Clark

This simple and delicious chicken recipe combines juicy marinated chicken with fresh vegetables. This wholesome meal cooks quickly in the air fryer, and it leaves less mess to clean up. Plan on letting the chicken marinate for at least 20 minutes and using metal kebab sticks for cooking in your air fryer.

Serves 4

  • 1 tablespoon olive oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon chili powder
  • ½ teaspoon ground black pepper
  • 4 boneless, skinless chicken breasts (1 pound total), cut into 1" cubes
  • 1 medium zucchini, sliced ½" thick
  • 1 medium red bell pepper, seeded and cut into 1" cubes
  • 1 medium yellow bell pepper, seeded and cut into 1" cubes
  • 1 small red onion, peeled and cut into 1" cubes

1. In a medium shallow dish, mix together olive oil, soy sauce, honey, salt, garlic powder, ginger, chili powder, and black pepper. Combine chicken and marinade in a zip-top bag and refrigerate 20 minutes or up to 24 hours.

2. Preheat air fryer to 350°F.

3. Remove chicken from marinade and place chicken on skewers, alternating with each type of vegetable. Leave ½" at the end of each skewer.

4. Arrange chicken skewers inside air fryer in an even layer (you may need to work in batches). Air fry 18 minutes, flipping halfway through. Chicken is done when it reaches an internal temperature of 165°F. Remove from air fryer and serve.
