Air Fryer Potatoes O’Brien Recipe by Aileen Clark

This classic breakfast potato dish is excellent when cooked in the air fryer. The potatoes get extra crispy without burning. The onion and bell peppers get soft and slightly charred and are never too crunchy. The green onion garnish adds a nice fresh bite to this dish, but feel free to omit if you don’t have any on hand. These potatoes can be served as a traditional breakfast dish or as a side dish at dinner. Try serving them with Filet Mignon with Garlic Herb Butter for a hearty meal.

Serves 4

  • 1 ½ pounds Yukon Gold potatoes, cut into ½" cubes
  • 1 small green bell pepper, seeded and chopped
  • 1 small red bell pepper, seeded and chopped
  • 1 medium yellow onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 2 tablespoons olive oil
  • 1 ¼ teaspoons salt
  • ¼ teaspoon ground black pepper
  • 2 medium green onions, thinly sliced

1. Preheat air fryer to 400°F.

2. In a large bowl, combine potatoes, bell peppers, onion, garlic, olive oil, salt, and black pepper. Mix until potatoes and peppers are evenly coated with oil and spices.

3. Place potato mixture inside air fryer. Air fry 20 minutes, shaking or turning halfway through. Potatoes are done when they are golden brown and fork-tender.

4. Remove potatoes from air fryer, top with green onions, and serve.
