Air Fryer Quick Breakfast Bombs Recipe by Robin Fields

These quick bites are excellent for making ahead and enjoying all week. Each bite has a yummy, cheesy center. They’re packed with protein, so you’ll have energy. For a sweet take, add 1 tablespoon honey to the melted butter before you brush it over the biscuits.

Yields 8, 1 per serving

  • ½ pound ground pork sausage
  • 2 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 (7.5-ounce) cans refrigerated biscuits
  • ½ cup shredded mild Cheddar cheese
  • 2 tablespoons salted butter, melted

1. In a medium skillet over medium heat, brown sausage until no pink remains, about 10 minutes. Drain the fat and return skillet to medium heat.

2. Push sausage to edges of pan, leaving the center clear. Crack eggs into the center of pan and let cook 1 minute.

3. Sprinkle eggs with salt and pepper, then stir into cooked sausage. Continue cooking another 2 minutes or until eggs are fully cooked.

4. Preheat air fryer to 350°F.

5. On a clean work surface, separate biscuits and gently flatten to ½" thickness.

6. Place 1 tablespoon sausage mixture on each of eight biscuits. Sprinkle each with 1 tablespoon cheese.

7. Press edges together, or use a fork, to seal completely. Brush with butter.

8. Place biscuits into air fryer basket, working in batches as needed. Bake 10 minutes, flipping when 3 minutes remain. The biscuits will be golden brown when fully cooked. Serve warm.
