Yields 12 cookies, 1 per serving
- 6 tablespoons salted butter, melted
- ¼ cup light brown sugar, packed
- 2 tablespoons pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon maple extract
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 1 cup quick oats
- ½ cup chopped pecans
1. Preheat air fryer to 300°F.
2. In a medium bowl, mix butter, brown sugar, maple syrup, egg, vanilla, and maple extract until well combined.
3. In a separate medium bowl, whisk together flour, salt, baking soda, and oats.
4. Slowly add the wet ingredients to the dry ingredients and stir until combined. Fold in pecans.
5. Scoop about 2 tablespoons dough, roll into a ball, then gently flatten into a disc about ½" thick. Repeat with remaining dough.
6. Place cookies into air fryer basket, working in batches as needed. Bake 10 minutes or until lightly browned. Let cool 10 minutes before serving.
