Yields 12, 1 per serving
- 1 cup whole milk
- ¼ cup salted butter, cubed
- 2 tablespoons light brown sugar, packed
- 1 cup all-purpose flour
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
1. Pour milk into a medium saucepan over medium heat. Add butter and whisk in brown sugar. Bring mixture to a boil, about 3 minutes.
2. Add flour, stirring quickly until a smooth dough forms, about 1 minute.
3. Remove from heat and transfer dough to a large bowl. Let cool 5 minutes.
4. Once cooled, mix in egg and vanilla.
5. Preheat air fryer to 350°F. Cut two pieces of parchment to fit air fryer basket.
6. Fill a pastry bag fitted with a rounded star tip with dough. Make twelve 4"-long churros on parchment, using kitchen scissors to cut each churro.
7. Place parchment into air fryer basket, working in batches as needed. Bake 8 minutes or until golden brown, flipping when 2 minutes of cook time remain.
8. In a medium bowl, whisk together granulated sugar and cinnamon. Roll each churro in mixture as soon as it comes out of air fryer. Set aside to cool 5 minutes, then serve immediately.
