Air Fryer Bruschetta Recipe by Aileen Clark

Bruschetta is a well-loved appetizer, and for good reason. The crusty, crunchy bread slices topped with tomato, fresh basil, and Parmesan can’t be beat. The air fryer makes the French bread extra crispy and cooks it quickly. Make sure to remove the seeds from the Roma tomatoes, otherwise the bread will get soggy. Freshly grated Parmesan cheese is worth the extra work, as the flavor will be much stronger than the pre-shredded Parmesan cheese sold at the grocery store.

Serves 8

  • 1 loaf French bread
  • 2 tablespoons olive oil
  • 8 Roma tomatoes
  • ⅓ cup chopped fresh basil
  • 2 cloves garlic, peeled and minced
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup grated Parmesan cheese

1. Preheat air fryer to 375°F.

2. Brush each side of French bread loaf with 1 tablespoon olive oil. Slice bread into 8 even slices. Arrange bread in a single layer inside air fryer (you may need to work in batches). Air fry 3 minutes or until golden.

3. Slice Roma tomatoes in half and scoop out seeds. Dice tomatoes and place in a medium bowl. Add basil, garlic, balsamic vinegar, salt, and pepper. Stir to combine.

4. Remove bread from air fryer. Top each piece of toasted bread with tomato mixture and sprinkle with Parmesan cheese. Serve.
