Clafouti is a light French dessert with fresh fruit baked right into its custardy base. The dish is similar to a baked pancake, but has a more elegant flair. Cherries are the traditional fruit used to make clafouti, but you can get as creative as you’d like with raspberries, blueberries, or even peaches.

- 4 large eggs
- 2 large egg yolks
- ½ cup granulated sugar
- 1 cup whole milk
- 1 teaspoon almond extract
- ½ teaspoon vanilla extract
- ½ cup cake flour
- ¼ teaspoon salt
- ½ cup halved pitted cherries
- 2 tablespoons confectioners’ sugar
1. Preheat air fryer to 320°F. Spray two 6" round baking pans with cooking spray.
2. In a large bowl, whisk eggs and egg yolks until well combined and foamy, about 2 minutes.
3. Add granulated sugar, milk, almond extract, and vanilla, whisking until well combined and foamy at the top.
4. Mix in cake flour and salt until well combined. Pour mixture evenly between prepared pans. Scatter ¼ cup cherry halves over the top of each pan.
5. Place pans into air fryer basket, working in batches as needed. Bake 10 minutes. When done, the top will be very puffy and browned. A minute after the cooking has stopped, the top will deflate but should feel firm to the touch in the center.
6. Sprinkle confectioners’ sugar over the top before serving.

Cake flour makes this dish extra light. Cake flour contains cornstarch and is finely ground, which helps make things tender. If you don’t have any on hand, you can make your own at home in a pinch. Simply mix 7 tablespoons of all-purpose flour and 1 tablespoon of cornstarch together to substitute in this recipe.
