Air Fryer Confetti Cake Mix Cookies Recipe by Robin Fields

This is great to make with the family. They’re an easy recipe that the kids will be excited to help make, without the hassle of multiple measured-out ingredients. If you’re a fan of cake pops, you’ll love the texture of these super-moist cookies.

Yields 12, 1 per serving

  • 1 (18.25-ounce) box vanilla cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup rainbow sprinkles, divided

1. Preheat air fryer to 350°F. Cut two pieces of parchment to fit air fryer basket.

2. In a large bowl, mix cake mix, eggs, and oil together. Fold in ¼ cup sprinkles.

3. Scoop about 2 tablespoons dough, roll into a ball, then gently flatten into a disc about ½" thick. Repeat with remaining dough, leaving 2" of space in between.

4. Place remaining ¼ cup sprinkles on a plate and press one side of each cookie into sprinkles to coat. Place on parchment (with sprinkle side up). Repeat with remaining dough.

5. Place parchment into air fryer basket, working in batches as needed. Bake 10 minutes or until golden at edges. Transfer to a wire rack to cool. Serve warm.
