Not wanting to spend a lot of time making a full pan of lasagna on a busy evening, I came up with this easy air-fryer recipe. I was amazed at how well it turned out.

MAKES: 2 SERVINGS
- 1 cup meatless pasta sauce, heated
- ¾ cup shredded part-skim mozzarella cheese
- ½ cup 4% cottage cheese
- 1 ½ cups cooked wide egg noodles
- 2 Tbsp. grated Parmesan cheese
- Chopped fresh parsley, optional
1. Preheat air fryer to 350°. Stir together warm spaghetti sauce, mozzarella and cottage cheeses. Fold in noodles. Pour mixture into 2 greased 2-cup baking dishes that fit in air fryer. Sprinkle with Parmesan cheese.
2. Place dishes in air fryer. Cook until bubbly, about 15 minutes. If desired, top with parsley.
1 lasagna: 381 cal., 15g fat (7g sat. fat), 68mg chol., 1028mg sod., 39g carb. (14g sugars, 4g fiber), 23g pro.
AIR-FRYING TIP
Save yourself some work later by assembling these mini lasagnas ahead of time. You can keep the prebaked dishes covered in your refrigerator for up to 2 days before baking them in the air fryer.
