Air Fryer Key Lime Pie Bars Recipe by Robin Fields

Citrus is always fun and refreshing, and so are these bars. The crumbly crust and rich, creamy filling go perfectly together. The lime is just the right amount of tangy to make this summertime dessert the star of the show.

Serves 9

  • 8 graham cracker sheets
  • 3 tablespoons salted butter, melted
  • 3 large egg yolks, whisked
  • 1 (14-ounce) can sweetened condensed milk
  • ½ cup granulated sugar
  • 1 ¾ cups lime juice
  • 1 tablespoon fresh lime zest

1. Preheat air fryer to 320°F. Line an 8" × 8" baking pan with parchment and lightly spray with cooking spray.

2. Place graham crackers into a food processor and pulse ten times or until mostly broken down. Add butter and pulse five times or until a sand-like texture that sticks together when pressed between your fingers forms.

3. Firmly press crust mixture into the bottom of prepared pan. Place pan into air fryer basket. Bake 5 minutes.

4. In a large bowl, whisk together egg yolks, sweetened condensed milk, sugar, lime juice, and lime zest until well combined and smooth. Pour mixture in baked crust.

5. Place pan into air fryer basket. Bake 15 minutes or until edges have browned and the center is set. Let cool 1 hour, then refrigerate 4. hours or until completely chilled before serving.

SEASONAL LIMES

In the off-season, it can be hard to find juicy limes, depending on where you live. You can use bottled lime juice for this recipe, but it’s important to keep in mind the flavor may taste a little more artificial.
