Well, if you’re cooking large amounts of bacon or meat on a flat surface, you will get fat building up on the griddle surface. This can lead to the griddle smoking and soggy bacon.

…is the best largest electric griddle. We love the ease of the tilt ‘n drain feature. Simply pull the handles outward when cooking meat and bacon, and all the fat can easily drain away from the cooking surface. We found that the backstop ledge was very useful for flipping eggs and pancakes, and the drip-tray was an adequate size.
