Air Fryer Loaded Sweet Potato Skins Recipe by Aileen Clark

This is a tasty spin on a classic appetizer that you won’t want to miss! The sweet potatoes are made perfectly crisp in the air fryer. Then the filling is mixed with buttermilk and seasonings to enhance the flavor of the sweet potato, without making it extra sweet. Finally, it’s loaded with delicious toppings: two types of cheese, crumbled bacon, sour cream, and chives. The result is a mouthwatering appetizer that you will want to make again and again.

Serves 4

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • ¼ cup buttermilk
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded sharp Cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • ¼ cup sour cream
  • 2 tablespoons chopped chives

1. Preheat air fryer to 400°F.

2. Poke sweet potatoes all over with the tines of a fork and place inside air fryer. Air fry 20 minutes or until fork-tender.

3. Remove sweet potatoes from air fryer and slice in half. Scoop flesh out from potatoes, leaving some sweet potato flesh around the edges of each potato skin. Add flesh to a medium bowl.

4. Brush potato skins with olive oil and place inside air fryer, skin side down. Air fry 5 minutes.

5. Add buttermilk, salt, and pepper to bowl with sweet potato flesh. Mash potato and mix well.

6. Fill each sweet potato skin with a scoop of mashed sweet potato mixture. Top with mozzarella and Cheddar cheeses. Air fry an additional 5 minutes.

7. Remove from air fryer and top each sweet potato skin with each remaining ingredient: crumbled bacon, sour cream, and chives. Serve warm.
